Ingredients
For the Chicken Base:

Ice cubes (for the trick)

1 medium potato (peeled & grated)

1 cup wheat flour

Step 1: Prepare the Chicken

Take the chicken breasts and make small cuts (slits) across the surface.

Insert ice cubes into these cuts.

Let the chicken rest for a few minutes (this helps keep it juicy and tender).
Step 2: Cut the Chicken

Remove the ice cubes.

Slice the chicken into thin strips.

Then cut into small cubes.
Step 3: Make the Mixture

Place chopped chicken in a large bowl.

Add grated potato.

Crack in 1 whole egg.

Black pepper

Mix everything well.
Step 4: Add Flour

Add 1 cup wheat flour gradually.

Mix until you get a smooth, thick batter-like consistency.
Step 5: Cook the Base

Heat a skillet and drizzle olive oil.

Spread the oil evenly using a brush or spoon.

Pour the chicken mixture into the pan.

Cover and cook on low-medium heat for 15 minutes.
Step 6: Flip & Cook Again

Carefully flip the cooked base onto a plate.

Place it back into the pan to cook the other side until golden.

Add shredded mozzarella on one half of the base.

Add 1 egg yolk on top of the cheese.

Sprinkle more mozzarella over it.
