Cheesy Chicken & Potato Skillet

 

Ingredients

For the Chicken Base:

  • 2 chicken breasts
  • Ice cubes (for the trick)
  • 1 medium potato (peeled & grated)
  • 1 egg
  • 3 garlic cloves (minced)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup wheat flour

For Cooking:

  • 1–2 tablespoons olive oil

For Filling:

  • Shredded mozzarella cheese (as needed)
  • 1 egg yolk

👨‍🍳 Instructions

Step 1: Prepare the Chicken

  1. Take the chicken breasts and make small cuts (slits) across the surface.
  2. Insert ice cubes into these cuts.
  3. Let the chicken rest for a few minutes (this helps keep it juicy and tender).

Step 2: Cut the Chicken

  1. Remove the ice cubes.
  2. Slice the chicken into thin strips.
  3. Then cut into small cubes.

Step 3: Make the Mixture

  1. Place chopped chicken in a large bowl.
  2. Add grated potato.
  3. Crack in 1 whole egg.
  4. Add:
    • Minced garlic
    • Salt
    • Black pepper
  5. Mix everything well.

Step 4: Add Flour

  1. Add 1 cup wheat flour gradually.
  2. Mix until you get a smooth, thick batter-like consistency.

Step 5: Cook the Base

  1. Heat a skillet and drizzle olive oil.
  2. Spread the oil evenly using a brush or spoon.
  3. Pour the chicken mixture into the pan.
  4. Spread it evenly using a spoon (like a thick pancake).
  5. Cover and cook on low-medium heat for 15 minutes.

Step 6: Flip & Cook Again

  1. Carefully flip the cooked base onto a plate.
  2. Place it back into the pan to cook the other side until golden.

Step 7: Add Cheese Filling

  1. Add shredded mozzarella on one half of the base.
  2. Add 1 egg yolk on top of the cheese.
  3. Sprinkle more mozzarella over it.

Step 8: Final Cooking

  1. Cover the pan again and cook for 5 minutes until cheese melts.
  2. Fold the other half over (like an omelette or stuffed pancake).

Step 9: Serve

  1. Remove carefully and place on a plate.
  2. Slice and serve hot.
