🛒 Ingredients

For the Eggs:

  • 8 eggs
  • Water (for boiling)

For the Vegetables:

  • 1 tablespoon olive oil
  • 1 onion (finely diced)
  • 3 garlic cloves (minced)
  • ½ yellow bell pepper (chopped)
  • ½ green bell pepper (chopped)
  • ½ red bell pepper (chopped)
  • 1 tomato (chopped)

Seasoning:

  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon oregano

Garnish:

  • Fresh chives (optional, chopped)

👨‍🍳 Instructions

Step 1: Boil the Eggs

  1. Bring a pot of water to a boil.
  2. Add 8 eggs carefully.
  3. Boil for 8–10 minutes until fully cooked.
  4. Drain the water using a strainer.
  5. Let the eggs cool slightly.

Step 2: Prepare the Vegetables

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and sauté until soft.
  3. Add minced garlic and cook for a few seconds.
  4. Add chopped:
    • Yellow bell pepper
    • Green bell pepper
    • Red bell pepper
    • Tomato
  5. Stir and cook until vegetables soften.

Step 3: Season

  1. Add:
    • Salt
    • Black pepper
    • Oregano
  2. Mix well and let flavors combine.

Step 4: Prepare the Eggs

  1. Transfer boiled eggs to a bowl.
  2. Break or mash them into small pieces (not too big chunks).

Step 5: Combine

  1. Add the cooked vegetables to the mashed eggs.
  2. Mix everything well until evenly combined.

Step 6: Final Touch

  1. Sprinkle chopped chives on top (optional).
