Baked Potato Egg Casserole (Better Than Pizza!)

🛒 Ingredients

For the Base:

  • 3 medium potatoes (sliced into rounds)
  • 1 teaspoon salt (for boiling)
  • 1–2 tablespoons olive oil

For the Egg Mixture:

  • 4 eggs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • Fresh chives (to taste, chopped)
  • 1 tomato (diced)
  • 1½ cups natural yogurt

For Topping:

  • 2 pepperoni sausages (sliced into rounds)
  • Shredded mozzarella cheese (as needed)

👨‍🍳 Instructions

Step 1: Prepare the Potatoes

  1. Slice the potatoes into thin rounds.
  2. Transfer them to a pot and add enough water to fully cover.
  3. Add 1 teaspoon salt.
  4. Boil until the potatoes are just tender (not too soft).
  5. Drain and set aside.

Step 2: Assemble the Base

  1. Preheat your oven to 356°F (180°C).
  2. Grease a baking dish with olive oil.
  3. Arrange the boiled potato slices in a single layer, slightly overlapping.

Step 3: Prepare the Egg Mixture

  1. In a bowl, crack 4 eggs.
  2. Add:
    • Salt
    • Black pepper
    • Turmeric
    • Paprika
  3. Whisk well.
  4. Add chopped chives, diced tomato, and yogurt.
  5. Mix until smooth and well combined.

Step 4: Combine

  1. Pour the egg mixture evenly over the potato layer.
  2. Use a spoon to spread it so all potatoes are covered.

Step 5: Add Toppings

  1. Arrange sliced pepperoni sausages evenly on top.
  2. Sprinkle shredded mozzarella generously over everything.

Step 6: Bake

  1. Place the dish in the oven.
  2. Bake for 30 minutes or until:
    • The top is golden
    • The cheese is melted
    • The center is set

Step 7: Serve

  1. Remove from the oven and let it cool slightly.
  2. Cut into portions and serve warm.
