Caramelized Rice Milk Dessert

 

🛒 Ingredients

For the Base:

  • 1 cup raw rice
  • 1 cup sugar
  • 1 cup milk (plus extra if needed)
  • 4 tablespoons milk powder
  • 3 tablespoons walnuts (chopped)
  • 2–3 tablespoons oil (for frying rice)

👨‍🍳 Instructions

Step 1: Fry the Rice

  1. Heat oil in a pan over medium heat.
  2. Add 1 cup raw rice.
  3. Stir continuously until the rice turns light golden.
  4. Remove and place on paper towels to absorb excess oil.

Step 2: Grind the Rice

  1. Let the fried rice cool slightly.
  2. Transfer it to a food processor or mixer.
  3. Blend until you get a coarse or fine texture (like semolina).

Step 3: Prepare Caramel Milk Mixture

  1. In the same pan, add 1 cup sugar.
  2. Heat on low-medium flame, stirring until it melts and starts caramelizing.
  3. Slowly add 1 cup milk (carefully, it may bubble).
  4. Stir continuously until smooth.
  5. Add 4 tablespoons milk powder and mix well.

Step 4: Combine Everything

  1. Add the ground fried rice into the caramel milk mixture.
  2. Mix well until everything is combined and thickens.
  3. Add chopped walnuts and mix again.

Step 5: Set the Dessert

  1. Line a bowl or tray with parchment paper.
  2. Transfer the mixture into it.
  3. Spread evenly using a spoon.

Step 6: Chill

  1. Fold or cover with the paper.
  2. Refrigerate for 2 hours or until firm.

Step 7: Serve

  1. Remove from the fridge and take off the paper.
  2. Cut into pieces and serve.
